Kitchen porter service in Florence

Pot wash and dish service for restaurants, hotels and canteens.

The pot wash is the station nobody wants to keep and the one that stops the whole kitchen when it is left uncovered. A service falls apart because the plates ran out, not because the chef was missing. We cover it: evenings, weekends and peak season.

Washing crockery, pans and kitchen equipment, resetting stations, end-of-service cleaning. Staff arrive trained on HACCP rules, because in a kitchen a procedural mistake is invisible until the inspection.

We cover standing shifts or one-off cover: Saturday nights, the high season, the week someone is missing. Same principle as our porterage: you do not hire for a peak, we send who is needed when it is needed.

Evening and weekend pot wash shifts

On a Saturday night in Florence you cannot find a dishwasher, and halfway through service you do not go looking. We cover standing shifts agreed by the week, and same-day cover when somebody fails to turn up. Whoever arrives already knows where things go, because it is always the same firm sending them.

End-of-service kitchen cleaning

Surfaces, burners, fryers, extraction, floors, under the equipment. This is the work a brigade does badly at two in the morning because it is exhausted, and the first thing an inspector looks at. With a dedicated team the kitchen reopens clean and the kitchen staff go home.

Staff trained on HACCP rules

Wash temperatures, keeping dirty apart from clean, waste handling, uniforms. These are rules you learn once and then apply without thinking, and that is what separates a trained kitchen porter from somebody hired at the last minute.

Hotels, canteens and catering

A hotel serving breakfast has a two-hour peak of crockery. A school canteen has one at noon, every day, always at the same time. A caterer has one on the evening of the event and never again. Three different needs, and the shift is built around yours.
